outside the pantry
I’m a foodie, nutrition nut, and advocate for the underrepresented in agriculture and the culinary world. I’m also a “starving” artist so I get quite creative and resourceful in the kitchen. I love going to the store and finding a grain I’ve never seen before. My hope is to encourage people’s curiosities in the their kitchens and diets, to think “outside the pantry/box”. Food isn’t just nutrition for our bodies, but nutrition for our souls. Oh yes, and I want to have fun!

Bee pollen, blackberries and celery
I recently bought some bee pollen and have been experimenting with it. It's flavor kind of reminds me of goji berries and the pollen will dissolve. I made up this simple fruit salad of finely chopped celery and blackberries (about equal parts) and stirred in some bee pollen. So good! It's amazing how the flavors work together! When i first made this last night i added more celery and it surprisingly remind me of the flavor of blueberry pie! Yum yum :)

Fruit "cobbler" porridge
For breakfast i made a hybrid of fruit salad and porridge which resulted in the flavors of a spring fruit cobbler. Yum way to start the day!
For the porridge i boiled some buckwheat, goji berries and already cooked amaranth with some flax seed milk, salt, cinnamon and ginger.
Then I chopped up a small Clementine, some blackberries and some soaked almonds in a bowl. Poured the porridge on top and enjoyed. I'd like to think it tasted like the sun breaking in on a dew filled morning. Refreshing!
I suppose a little honey and/or lemon would be good additions. I generally don't like my sweets very sweet. But if it calls to you, go for it! Your soul requires it ;)
Mocktail
A yummy no booze refresher with a kick!
If you like ginger and the robustness of kombucha, you will for sure enjoy and won't miss the booze ;)
I blended (approximately measuring):
1 tsp vanilla
1 tsp apple cider vinegar
1 large wedge of lemon without rind
1 tsp chopped fresh ginger
1/2 tsp powder ginger
1/4 kombucha
Then poured that mixture with more kombucha in martini glass full of ice.
I think putting some herbs in there, like mint would be good too.
The kombucha i used was my own brew flavored with lemon and lavender, but experiment!!

RAW "dolmas"
I came accross a recipe for dolmas and was inspired to attempt something with what i had in the pantry. I didn't have grape leaves so i used spinach leaves that i seasoned with some apple cider vinegar, mustard seed oil and salt. The filling i made from food processing:
Sprouted chick peas
Onions
Celery
Raisins
Sumac
Garlic powder
Lemon juice
Flax seed oil
Salt
The dip i made from:
Soaked almonds, sunflower seeds and pecans
Sprouted chick peas
Saffron
Lemon juice
Salt
Garlic
Maybe nutritional yeast? I can't remember
I think that's all
It was soooooooo goooood!
Would have been better with grape leaves, but that's not really something i keep on hand. But i just might for now on!
