Another use for watermelon rinds

So i've decided to call my cabbage "tortilla" tacos, cabbacos :)  Cabbacos have been born! Anyway...today's story.  Inspired from the idea of pickled watermelon rind, I made a salsa from watermelon rind. I put the following in my food processor : just the white of the watermelon rind, cilantro, a small amount of pickles(I was out of pickled jalapenos) and dash of habanero hot sauce(to compensate for the jalapenos). Pretty tasty :)

Tonight's dinner

A variation of cesar salad.  Spinach tossed with pan fried yams, mozzarella and a dressing made from canned mackerel, onion, mustard,  greek yogurt, hot sauce, pickle juice, flax oil and garlic lemon spice. I'm drinking a beer as the "crouton"  ;)
