My version of a BLT

Collard greens as my bread, stacked with a layer of avocado, a chopped medley of red onion, basil, garlic, salt, then a layer or tomato and salt, then turkey bacon, fresh mushrooms and dijon mustard.  Yummy with my earl gray ;)

Pumpkin gnocci with cashew thyme cream sauce
