Beet and collard green slaw

Over Thanksgiving my sister made a beautiful slaw from raw butternut. It inspired me to invent this slaw for lunch.
Shredded beets and collard greens
Chopped brazil nuts
Finely chopped dates
White truffle oil
Blueberry balsamic and coconut white balsamic vinegar

Soooooo goood!
